Satay is a popular throughout Indonesia and Malaysia. Depending on the region, this grilled and skewered meat dish is served with or without spicy dipping sauces and is seen everywhere from street vendors to high class restaurants.
Traditionally, the meat is skewered on the rib from a coconut leaf. But if you don't happen to have a coconut palm growing your back yard, and who among us does, feel free to use bamboo skewers.
Satay is equally at home on your outdoor grill or indoors, under the broiler. So it's perfect for everything from a backyard BBQ to a swank cocktail party.

Complete steps 1-4 the day before the party, then grill just before the party starts and keep warm in a 200° F oven for up to an hour.
For fabulous Malaysian Satay you'll need:

Makes 50-60 skewers
- 3 to 4 lbs of flank steak
- 1/2 cup peanut oil
- 4 medium onions, finely chopped
- 4 cloves garlic, crushed
- 3 teaspoons ground coriander
- 3 teaspoons ground cumin
- 3 teaspoons ground turmeric
- 3 teaspoons chilli powder
- 2 teaspoons dried dill
- 1/2 cup hazelnuts, crumbled in food processor
- 1/2 cup soy sauce
- 1/4 cup freshly squeezed lemon juice
- 3 teaspoons dark brown sugar
- 1/4 teaspoon freshly ground black pepper

here's how you do it:

1. Cut steak into thin strips and place in a large glass or ceramic bowl. Set aside.
2. Heat the oil in a large, heavy bottomed pan. Cook the onions, garlic, dill and spices until onion is tender, about 5 minutes.
3. Add hazelnuts, soy sauce, lemon juice, sugar and pepper. Cook for one minute, stirring constantly. Pour over the meat and toss to coat thoroughly with the marinade.
4. Cover the bowl and marinate the meat overnight in the refrigerator.
5. Soak 50-60 bamboo skewers in water for 20 minutes. Thread the steak on to the skewers and grill or broil for 5-10 minutes, turning frequently.
