Spice up your Cocktail Party Food line-up with a zippy little cocktail meatball recipe known as "Albondigas"...
Albondigas are a traditional Spanish dish of spicy meatballs, served swimming in a bowl of rich soup with rice.
Of course, for great cocktail party food, you probably don't want to serve food swimming in....well, anything really. So here is a great cocktail sized version that's perfect for your next party.
And best of all, you can make the meatballs a day or two before you need them and just set them in the sauce to simmer about 30 minutes before the party starts.
Easy!
Ingredients:

makes about 60 mini meatballs
For the albondigas:
- 1 pound ground beef
- 1 pound ground pork
- 2 cups fresh breadcrumbs
- 2 onions, finely chopped
- 1/2 teaspoon dried oregano
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- salt and freshly ground black pepper
- 2 eggs, lightly beaten
- 4-6 cups beef stock
- 1 jar salsa, whatever heat level you like
- corn oil, for frying

here's how you do it:

1. In a very large bowl, put the ground beef, pork, breadcrumbs, onion, oregano, cumin, garlic, salt and pepper.
2. Stir in the eggs.
3. Knead with clean, wet hands until all ingredients are well combined and you have a smooth, even mixture. You can add a little beef broth, if necessary, to hold the mixture together.
4. Use a small ice-cream scoop (2 tablespoon size), to form the mixture into balls.
5. Heat oil, 1/2" deep, in a heavy bottomed frying pan and fry the meatballs for about 5 minutes, turning occasionally, until browned on all sides.
6. Put the meatballs in a shallow pan (like a high sided saute pan) and add enough beef stock to cover. Add the jar of salsa and bring to the boil.
7. Reduce heat to medium-low and simmer for 40 minutes.
8. Remove the meatballs with a slotted spoon and serve.
